This excellent dish is rich in the aroma of maple. Although it requires last-minute preparation, the recipe is easy enough to handle no matter how many things are on your holiday menu. Source: Martha Stewart Living, November 2002. 6 servings. Ingredients: 3 medium sweet potatoes (1 1/2 to 2 pounds), well washed, 4 tablespoons (1/2 stick) unsalted butter, 3/4 cup pure maple syrup, coarse salt and freshly ground pepper, small sprigs fresh marjoram, for garnish. Instructions: 1. Preheat the oven to 400 degrees. Cut each sweet potato in half lengthwise and cut each half crosswise into 1-inch-thick half-moons. 2. Melt the butter in a large cast-iron or other heavy skillet over medium heat. Add the sweet potatoes; toss to coat evenly. Add the maple syrup; toss the potatoes to coat and bring to a boil. 3. Transfer the skillet to the oven; cook, stirring occasionally, until the potatoes are golden, well glazed, and tender when pierced with a paring knife, about 20 minutes. Remove from the oven and serve with salt and black pepper. Serve hot, garnished with marjoram.
