The sweetness of beets is a natural match for gingers spicier side. Beets can be roasted up to 3 days ahead; just bring them to room temperature before serving. This recipe includes 6 small beets, 2 tablespoons of extra-virgin olive oil, 1 tablespoon of preferred white balsamic vinegar, 1 tablespoon of finely grated fresh ginger, salt and black pepper, and 1/2 cup of roasted and chopped peanuts. The beets are roasted in parchment paper at 425 degrees Fahrenheit for 45 to 60 minutes, then cooled and sliced into wedges. In a large bowl, the dressing is made by whisking together the olive oil, vinegar, ginger, salt, and pepper. The beets are then tossed in the dressing and topped with chopped peanuts.
