This healthy French stew, similar to Italian minestrone, gets its name and distinctive taste from pistou, a paste made from crushed basil, garlic, and olive oil. In this recipe, the soup is garnished with toasted pine nuts and pesto. Source: Martha Stewart Living, March 2002. The recipe serves 4 and includes ingredients for the pistou, croutons, and soup. To make the pistou, combine basil, pine nuts, garlic, salt, and pepper in a food processor and pulse until combined. Add olive oil while pulsing for 1-2 minutes. To make the croutons, sprinkle Parmesan cheese on baguette slices and broil for 2 minutes. To make the soup, cook beans, onion, garlic, and bouquet garni in oil for 4 minutes. Add water and salt and simmer for 30-40 minutes. Cook pasta separately and add to the soup with vegetables and peas. Serve soup with pistou and croutons, garnished with Parmesan cheese.
