This soup will give you a fresh taste of turnips and will keep your hunger pains at bay after lunch. Source: Whole Living, January/February 2012. Makes 10 cups. Ingredients: 2 tablespoons olive oil, 1 yellow onion, diced, 4 cloves garlic, chopped, 3 stalks celery, finely diced, 1 1/2 cups chopped tomatoes, 1 1/2 cups dry red lentils, 1 turnip, peeled and diced, 1/2 cup chopped fresh flat-leaf parsley, 1 teaspoon red wine vinegar (optional), coarse salt and black pepper. Instructions: 1. In a pot, heat the oil over medium heat. Add the onion, garlic, and celery; cook, stirring, until tender, 6 to 8 minutes. 2. Increase the heat to high and add the tomatoes; cook for 1 minute. Add the lentils, turnip, and 6 cups water. 3. Bring to a boil, then reduce the heat and simmer until the lentils are tender, 20 to 25 minutes. Stir in the parsley and vinegar. Season with salt and black pepper.
