Sushi-Kuchen

This recipe for sushi cake is a great appetizer for a light Asian meal or can be enjoyed alone with hot or cold sake. The use of cooked shrimp and crab meat instead of raw fish allows for the cake to be prepared in advance and chilled until ready to serve. The recipe includes instructions for toasting the nori sheets to enhance their flavor and assembling the cake with layers of sushi rice, wasabi mayo, and the shrimp and crab mixture. Garnish with pickled ginger, radish sprouts, and sesame seeds and serve with additional wasabi mayo. This recipe is from Martha Stewart Living, December 2002 and serves 10 people. Note that wasabi, nori, and pickled ginger can be found in the Asian food section of some supermarkets.
