Cooks Notes
Ovnen er et glimrende sted for stigende dej. Forvarm til 175 grader i 5 minutter. Sluk for varme og lad dækket stige op i varm ovn. Dette reducerer stigningstiden med næsten en tredjedel.

These rolls are perfect for making our Smoked Pulled-Pork Sandwiches. Source: Martha Stewart Living, September 2000. Makes about 1 dozen. Yield. Ingredients: 1/2 cup warm milk (about 110 degrees), plus 1 tablespoon milk. 1/2 cup warm water (about 110 degrees). 1 1/2 tablespoons sugar. 1 package active dry yeast. 4 large egg yolks. 1 1/2 teaspoons coarse salt. 3 tablespoons unsalted butter, melted and cooled. 1 cup yellow cornmeal, plus more for sprinkling. 2 cups bread flour. Extra-virgin olive oil, for bowl and plastic wrap. Directions: 1. In the bowl of an electric mixer fitted with the paddle attachment, combine warm milk, water, and sugar. Sprinkle yeast on top. Let stand until foamy, about 10 minutes. Add 3 egg yolks, salt, butter, cornmeal, and flour; mix on low speed for 2 minutes. Switch to dough hook attachment; beat until dough is smooth, soft, and does not stick to fingers when pressed, about 5 minutes. 2. Transfer dough to a clean surface. Knead into a ball; place in an oiled bowl. Cover tightly with plastic wrap; let stand in a warm place until dough has doubled in size, about 45 minutes. Preheat oven to 400 degrees. Line a baking sheet with parchment. 3. Punch down dough, and divide into 12 balls (2 1/4 ounces each). Gently roll dough on a clean surface, pressing down as it rolls into a 2 1/4-inch ball. Place on prepared baking sheet. Repeat rolling until all dough is used. Loosely cover with oiled plastic wrap. Let stand in a warm place to rise for 10 minutes. 4. In a small bowl combine remaining egg yolk and remaining tablespoon milk. Brush tops of rolls with egg wash. Sprinkle rolls with cornmeal. Bake until deep golden brown, rotating pan once during baking, about 15 minutes. Remove from oven, and transfer to a wire rack to cool. Cooks Notes: The oven is an excellent place for rising dough. Preheat to 175 degrees for 5 minutes. Turn off heat and let covered dough rise in warm oven. This reduces rising time by almost a third.
