This wine holiday dish is almost a dessert before you get to the main course. The recipe comes from Martha Stewart Living, November 1998. The ingredients include 7 tablespoons of unsalted butter, softened, plus more for the gratin dish, 5 pounds of sweet potatoes, 7 tablespoons of packed dark brown sugar, 1 1/2 teaspoons of ground cinnamon, a pinch of cayenne pepper, salt and freshly ground pepper, and 2/3 cup of pecan halves. The dish is baked in the oven at 400 degrees Fahrenheit for 30-35 minutes. It is important to make sure the potatoes are slightly undercooked in the first step, as they will cook more later.
