This dough is perfect for Brandied Fruit Tartlets or Salted Chocolate Tartlets. The recipe calls for 2 1/2 cups of all-purpose flour, 1 teaspoon of coarse salt, 1 cup (2 sticks) of cold unsalted butter cut into 1/2-inch pieces, and 3 tablespoons of ice water. To make the dough, pulse the flour and salt in a food processor, then add the cold butter and pulse until the mixture resembles coarse meal with some pea-sized butter pieces remaining. Sprinkle with ice water and pulse until the dough is crumbly but holds together when pressed (adding up to 3 more tablespoons of water, 1 tablespoon at a time, if needed). Do not overmix. Shape the dough into a 1-inch thick disk, wrap tightly in plastic, and chill for at least 1 hour (or up to 3 days). This recipe is from Everyday Food, December 2010.
