This easy “Bianca” lasagna is without tomatoes. This recipe is from Daily Food, September 2006. The dish takes 1 hour and 15 minutes to prepare and serves 4. The ingredients include olive oil for baking, 8 ounces of low-fat cream cheese at room temperature, 1 container (15 ounces) of partially skimmed ricotta cheese, coarse salt and ground pepper, 2 medium zucchinis (each 8 ounces), halved lengthwise and then thinly sliced crosswise, 1 clove of garlic, chopped, 2 tablespoons of dried oregano, 6 lasagna noodles without ridges, and 2 ounces of partially skimmed mozzarella cheese, chopped (1/2 cup). The instructions are to preheat the oven to 425 degrees Fahrenheit, lightly oil an 8-inch baking dish, combine the cream cheese and ricotta cheese in a medium bowl, season with salt and black pepper, combine the zucchini, garlic, and oregano in another medium bowl, season with salt and black pepper, and layer the lasagna noodles, zucchini mixture, and cheese mixture in the prepared dish, ending with the cheese mixture and mozzarella cheese. Cover the dish with aluminum foil and bake until bubbly and the noodles are tender, about 30 to 35 minutes. Remove the foil and bake until golden brown, about 15 to 20 minutes more. Let stand for 10 minutes before serving. The chefs notes suggest using uncooked lasagna noodles to save time.
