These sweet potatoes stand out with the addition of garlic and seasoning. This recipe is from the January/February 2003 issue of “Everyday Food”. The total time is 40 minutes with 10 minutes of prep and it serves 4.
Ingredients:
– 3 sweet potatoes
– 1 clove of garlic
– 1 1/2 tablespoons of olive oil
– 1/4 teaspoon of dried marjoram
– 1/8 teaspoon of crushed red pepper
– 1/4 teaspoon of salt
Instructions:
1. Preheat the oven to 400 degrees. Peel the sweet potatoes and cut them in half crosswise, then into wedges about 1 inch wide. Crush the garlic clove with the skin on.
2. On a baking sheet, sprinkle the sweet potatoes with garlic, olive oil, marjoram, crushed red pepper, and salt. Bake until tender, about 30 minutes.
