These easy potatoes make evening meals a little more special. Source: Martha Stewart Living, December/January 1999. Ingredients: 1 kilogram small red potatoes, 1 tablespoon salt, plus more to taste, 2 tablespoons butter, 1/4 cup milk, freshly ground pepper, 2 tablespoons fresh flat-leaf parsley, roughly chopped. Instructions: 1. Cut the potatoes in half and place them in a 3-liter pot. Fill the pot with cold water to cover the potatoes by about 1 inch. When the water starts to boil, add 1 tablespoon salt and reduce the heat to medium-low. Cook until fork-tender, about 20 minutes. 2. Drain the potatoes. Return the potatoes to the hot pot, add butter, milk, salt, and black pepper to taste. Mash the potatoes lightly, leaving some pieces intact. Mix in parsley, adjust the seasoning, and serve. Chefs notes: If you make the potatoes ahead of time, keep them warm by placing the pot over a double boiler or another pot in which water simmers.
