These delicious fried potatoes can be made using tubes of prepared polenta found in the refrigerators of local supermarkets. Source: Daily Food, April 2006. One hour 10 minutes 4 Total time Prep Doses Yield Ingredients 2 vials (18 ounces each) of regular prepared polenta 3 tablespoons olive oil Coarse salt and freshly ground pepper 1 tablespoon dried Italian seasoning or dried oregano Instructions 1. Preheat the oven to 450 degrees. Unroll and cut each polenta stick in half diagonally. Then cut each half lengthwise into 8 wedges. 2. Brush the olive oil onto a large baking sheet. Place the wedge fillets on the baking sheet; season with salt and black pepper and carefully turn with oil. Arrange the wedges in a single layer. 3. Bake, turning once with a thin metal spatula, until golden and crisp, 45 to 50 minutes. Drain on a paper towel-lined plate. Transfer to a shallow dish and toss with Italian seasoning before serving.
