This classic baked potato dish goes well with roasted chicken, beef or pork. Source: Daily Food, October 2009. 8 servings. Ingredients: 8 small red potatoes (about 2 1/2 kilograms total), 1 tablespoon vegetable oil, 1 cup sour cream, 1/4 cup milk, 3 tablespoons butter, 1/4 cup chopped chives (plus more for garnish), coarse salt and ground pepper. Instructions: 1. Preheat oven to 400 degrees. Rub potatoes with vegetable oil. On a baking sheet, bake until potatoes are easily pierced with a paring knife, about 45 minutes. Let cool slightly. 2. Using a parmesan cheese grater, cut a thin slice lengthwise from the top of each potato and discard. Using a spoon, scoop out a whole 1/2-inch potato flesh from the inside of the skin. Transfer to a bowl and add sour cream, milk, butter, and chives; mash until combined. Season with coarse salt and ground pepper. Spoon mixture into potato skins. Bake until lightly browned on top, 20 minutes. Serve sprinkled with more chives.
