This is an easy addition to the “Thanksgiving Day” menu, as it does not require cooking. Source: Martha Stewart Living, November 1995. Makes 2 cups. Ingredients: 2 cups fresh or thawed frozen blueberries, 1/4 cup red onion diced, 1 large jalapeno pepper, diced finely, 2 tablespoons fresh lemon juice, 2 blood oranges or navel oranges, peeled and diced, juice reserved, 2 tablespoons grated fresh ginger, 1/2 cup sugar, 2 stalks celery, peeled to remove strings, diced into 1/4-inch pieces, 1/4 cup pecans, toasted, chopped, 1/4 cup fresh mint leaves, roughly chopped. Instructions: 1. Place the blueberries in a food processor and pulse to chop roughly, about 5 pulses. Transfer to a medium bowl. 2. Add onion, jalapeno, lemon juice, orange sections and juice, ginger, sugar, and celery; stir gently. Chill for at least 1 hour and up to 2 days. Just before serving, add mint and pecans and stir.
