These fried potatoes get their signature texture and aroma from being cooked twice; once fried and once in the oven. Source: Martha Stewart Living, February 2007. This recipe calls for 4 large red potatoes, coarse salt, and 4 cups of vegetable oil. The potatoes are peeled, cut into sticks, soaked in salted water, dried, and then fried in hot oil until golden. They are then transferred to a baking sheet and baked in a preheated oven at 400°F for 10-12 minutes until crispy and golden. The potatoes are seasoned with salt and served immediately. This recipe was also featured on “Mad Hungry with Lucinda Scala Quinn.”
