This basic marinade gives a brilliant taste and preserves the meat. It is ideal for grilling and enhances the flavors of fresh vegetables, tofu, and soft cheeses. The marinade does not work well as a sauce, so discard it before cooking. Source: Martha Stewart Living, July 2003. Makes 3/4 cup, enough for 2 1/2 pounds of meat or fish. Ingredients: 2-3 tablespoons vinegar, 1 teaspoon extra-virgin olive oil, 1/2 cup mixed fresh herbs such as oregano, thyme, sage, parsley, and rosemary, roughly chopped, 1 teaspoon roughly chopped garlic, zest of 1 lemon (1 tablespoon), coarse salt and freshly ground black pepper, lemon wedges for garnish. Instructions: 1. Whisk together the ingredients in a nonreactive bowl. Arrange the meat in a dish; rub with the marinade. Cover; refrigerate for the time specified below, turning the meat occasionally. 2. Remove the meat from the refrigerator; allow it to come to room temperature before cooking. Remove the meat from the marinade; discard the marinade. Using a paper towel, wipe any large pieces of herbs or garlic from the meat. Season the meat with salt and black pepper. 3. Grill the meat to desired doneness. Garnish with herbs; serve with lemon wedges. Chefs Notes: Marinade times: • Memphis: 20 minutes • Cheese, tofu, and vegetables: 30 minutes • Thin and flaky fish fillets: 30 minutes • Thick and fine fish fillets: 1 hour • Beef, chicken, game, lamb, and pork: 6 to 24 hours.
