Preheat the oven to 450 degrees. Cover the potatoes with 2 centimeters of water in a medium saucepan and heat them; add a large amount of salt. Cook until the potatoes are tender, about 5 minutes. Drain and immediately throw into a bowl with oil and rosemary. (The potatoes break down slightly.) Season with salt and black pepper. 2. Transfer the potatoes to a baking sheet with a sheet. Bake, flipping once, until golden and fresh, about 35 minutes. Serve immediately. Chefs notes If you are serving the potatoes with roasted chicken, place the potatoes in the oven after the chicken has been roasted for about 15 minutes, so that everything will be ready at the same time.
