These delicate, crispy potatoes are the perfect French bistro-inspired accompaniment to our Hanger Steak with Shallots. Source: Martha Stewart Living, March 2006. This recipe takes 30 minutes to prepare, serves 4, and requires 10 minutes of cooking time. To make it, you will need vegetable spray, 2 medium-sized red potatoes (about 1 1/2 pounds), cut into matchsticks, 3 tablespoons of extra-virgin olive oil, kosher salt, and freshly ground black pepper. Preheat the oven to 425 degrees Fahrenheit. Cover 2 baking sheets with vegetable spray. Toss the potatoes, oil, and 1 teaspoon of salt in a bowl. Arrange the potatoes in a single layer on the prepared baking sheets. Bake, turning the potatoes with a metal spatula 2 or 3 times and rotating the sheets halfway through, until the potatoes are crisp and the edges are golden brown, 18 to 20 minutes. Transfer the potatoes to a large piece of parchment paper; let cool for 5 minutes. Season with salt and black pepper.
