This is a simple alternative to classic pasta. Use it when making caramelized Apple Galette. Source: Martha Stewart Living, October 1996. Makes 2 pounds. Yield. Composition. 1 3/4 cups all-purpose flour, plus more for dusting. 2 cups cake flour (not self-rising). 1 teaspoon coarse salt. 1 pound (4 sticks) unsalted butter, very cold, cut into small pieces. 1 to 1 1/4 cups ice water. 2 tablespoons freshly squeezed lemon juice. Instructions. 1. Whisk together the all-purpose flour, cake flour, and salt in a large bowl. Cut the butter into the flour mixture with a pastry blender until the largest pieces of butter are the size of peas. 2. Stir together the ice water and lemon juice in a small bowl. Gradually add the water mixture to the flour mixture, stirring with a fork until the dough just comes together. 3. Turn the dough out onto a lightly floured work surface and knead briefly to bring it together. Divide the dough in half and shape each half into a disk. Wrap the disks in plastic wrap and refrigerate for at least 1 hour or overnight. 4. Roll out the dough on a lightly floured surface to a thickness of 1/8 inch. Cut out circles of dough with a 4-inch cookie cutter. Place the circles on a baking sheet lined with parchment paper. Chill the circles in the refrigerator for at least 30 minutes.
