This healthy and delicious salmon recipe was produced by Ruth Estfon from Palm Harbor, Florida. Source: Everyday Food, March 2008. The recipe takes 10 minutes to make, serves 4, and requires the following ingredients: 4 skinless salmon fillets (6 ounces each), coarse salt and ground pepper, 1 tablespoon of olive oil, 2 bags (5 ounces each) of baby spinach, 1/2 cup crumbled feta cheese (2 ounces), 1/3 cup pine nuts, and 2 teaspoons of fresh lemon juice. To make the recipe, preheat the broiler and season the salmon with salt and pepper. Broil for 5-7 minutes until opaque. Meanwhile, heat the oil in a large skillet and add as much spinach as fits. Cook until tender, about 2 minutes. Drain excess liquid and mix in the feta, pine nuts, and lemon juice. Serve the salmon with the spinach sauté.
