This soup is all about the carrots, but adding breadcrumbs fried in olive oil gives it crunch and just richness. Source: Martha Stewart Living, June 2009. The recipe calls for butter, onion, carrots, water, honey, salt, pepper, olive oil, fresh breadcrumbs, parsley, and baby carrots for garnish. The instructions are to melt the butter in a pot, add onion and cook until softened, then add carrots and cook for 2 minutes. Add water and simmer until the carrots are very soft, then puree the soup in batches. Add honey, salt, and pepper, and let the soup chill for at least 3 hours or overnight. Before serving, prepare the breadcrumbs by heating olive oil in a saute pan, adding fresh breadcrumbs, and stirring until toasted and golden brown. Mix with chopped parsley, salt, and pepper, and use as a garnish with thin slices of baby carrots.
