These compressed mushrooms, seasoned with salt, pepper, and thyme, are the perfect textural contrast for crispy crostini. Source: Koko elämä, July/August 2010. The ingredients include 3 tablespoons of extra-virgin olive oil, kosher salt and fresh pepper, 1 kilogram of mixed mushrooms such as chanterelles, cremini, and oysters, wiped clean and sliced, and 2 teaspoons of fresh thyme. The instructions are to heat a large pan over high heat, add 2 tablespoons of oil, swirl to coat, add half of the mushrooms, sprinkle with salt and pepper, and cook until golden and tender, 4-5 minutes. Transfer to a bowl and repeat, using 1 tablespoon of oil. Add thyme to the second batch and then transfer to the bowl. Season with salt and pepper, and toss. Serve with crackers or crostini.
