This recipe for tart from blogger “Beltaka Peltry” in the “La Tartine Gourmande” cookbook is absolutely delicious with salty prosciutto and sweet roasted tomatoes. The source is the Martha Stewart Show, Episode 7065. It makes 4 tarts. Ingredients include 2 cloves of garlic, chopped, 1 teaspoon finely chopped fresh tarragon, 1 teaspoon light muscovado sugar, 1 tablespoon balsamic vinegar, 1/4 cup olive oil, plus more for drizzling, 9 ounces ripe cherry tomatoes, stems intact, sea salt and freshly ground black pepper, 4 slices of toasted bread, 1/2 cup soft, fresh goat cheese, 8 slices of prosciutto, and fleur de sel for serving. Instructions include preheating the oven to 325 degrees, combining garlic, tarragon, muscovado sugar, vinegar, and oil in a shallow baking dish, adding tomatoes and seasoning with salt and pepper, transferring to the oven and baking until soft, 1 to 1 1/2 hours, spreading each slice of toasted bread with goat cheese, topping each with 2 pieces of prosciutto and tomatoes, drizzling with oil and sprinkling with fleur de sel. Serve.
