This healthy baked dish delicately places sweet shrimp against spicy chorizo. Source: Martha Stewart Living, June 2004. 4 servings. Ingredients: 2 pounds cherry tomatoes, 3 cloves garlic, thinly sliced, 1 small onion, thinly sliced into pieces, 2 tablespoons fresh oregano, plus more for garnish, 1/4 cup olive oil, freshly ground pepper, 1 teaspoon coarse salt, 1 kilogram large shrimp (18-22), peeled and deveined, 1/2 kilogram Spanish chorizo, sliced into 3/4-inch rolls, 1 small ciabatta loaf, sliced into 8 slices (1/2 inch thick). Instructions: 1. Preheat the oven to 400 degrees. Toss tomatoes, garlic, onion, and oregano with oil in a large bowl; season with pepper and salt. Spread evenly in a 12-inch skillet. Bake, stirring occasionally, until tomatoes burst, about 30 minutes. 2. Add shrimp and chorizo, and stir until well coated. Bake until shrimp is cooked, 10 to 12 minutes. 3. Meanwhile, heat a grill or grill pan over medium heat. Using the remaining 1/3 cup of oil, brush each side of the bread with 1 teaspoon of oil; season with salt and black pepper. Grill bread, turning once, until golden brown, about 6 minutes. (Alternatively, toast bread under broilers.) 4. Place a piece of bread in each of the four serving bowls. Divide the shrimp mixture among the bowls; garnish with oregano. Serve the remaining bread slices on the side.
