This recipe for a rustic soup made with potatoes, leeks, butternut squash, and escarole is perfect for warming you up on a cool day. Serve it with our popovers. The ingredients include olive oil, leeks, celery, carrots, garlic, red pepper flakes, salt, pepper, chicken stock, water, butternut squash, Yukon Gold potatoes, escarole, chickpeas, lemon juice, mint, and dill. To make the soup, heat the oil in a large pot, add the leeks, celery, carrots, garlic, red pepper flakes, and salt, and cook until the leeks are translucent. Add the stock and water and bring to a boil. Add the squash and potatoes and simmer until tender. Stir in the escarole and chickpeas and cook until heated through. Add the lemon juice and herbs and season with salt and pepper. Enjoy!
