This recipe for whole roasted sea bass is from Sam Hayward of Fore Street. Source: Martha Stewart Show, March 2007. The ingredients include 2 whole sea bass (1 1/4 pounds each), salted, scaled, and edges removed, coarse sea salt and fresh black pepper, 1/4 cup extra-virgin olive oil, plus more for baking, 2 fresh sprigs of thyme, 2 sprigs of fresh rosemary, 2 fresh sprigs of flat-leaf parsley, 6 fresh bay leaves, 1/2 cup thinly sliced scallions, and 1 lemon juice. The instructions are to season the fish with salt and pepper, stuff with herbs, and bake in a preheated 450-degree oven for 15 minutes, or until the thickest part of the fish is just firm. Then, remove the skin and bones and serve.
