This recipe for Big-Batch Meatballs and Sauce makes enough for two meals – use the leftovers in our Meatball Pita Pizzas or Meatball Sandwiches. The recipe includes shredded zucchini, yellow onion, bulgur, ground pork, eggs, fresh oregano, garlic, salt, pepper, vegetable oil, olive oil, tomatoes, spaghetti, and Parmesan cheese. The meatballs are formed and fried in batches until browned, then the sauce is made with the remaining onion, garlic, tomatoes, and oregano. The meatballs are added to the sauce and cooked for 15-20 minutes. The recipe yields 22-24 meatballs and can be stored in an airtight container for up to 3 days. Serve with spaghetti and Parmesan cheese.
