This Prosciutto and Pesto Panini is an easy recipe for lunch or a light dinner. The ingredients include a 10-ounce loaf of ciabatta, pesto, extra virgin olive oil, thinly sliced Prosciutto di Parma, tapenade (optional), thinly sliced Fontina cheese, baby arugula or basil (optional), coarse salt, and freshly ground pepper. To make the sandwich, preheat a grill pan or panini press, spread one side of the ciabatta with pesto and the other with olive oil, layer one side with prosciutto, tapenade (if desired), red pepper, and arugula or basil (if desired), top with cheese, drizzle with olive oil, and season with salt and pepper. Brush the top and bottom with olive oil, place on the grill pan, and cook for 3-4 minutes on each side until golden and the cheese is melted. Cut into quarters and serve immediately.
