This recipe for a simple yet satisfying pasta dish was taken from Lidia Matticchio Bastianich and Tanya Bastianich Manualis favorite recipes, published by Alfred A. Knopf. Copyright 2012. Source: Everyday Food, November 2012. The dish takes 30 minutes to make, with 20 minutes of preparation time, and serves 6. The ingredients include coarse salt and freshly ground pepper, 2 tablespoons of extra-virgin olive oil, 2 slices of finely chopped bacon, 1/2 cup of chopped shallots, 2 cups of cleaned and sliced mushrooms such as shiitake, oyster, and cremini, 2 cups of chicken broth or canned chicken broth, 1 1/2 cups of thawed frozen peas, 1 tablespoon of unsalted butter, 1 pound of small pasta shells, and 1/2 cup of freshly grated Grana Padano or Parmigiano-Reggiano cheese (2 ounces). The directions involve boiling a large pot of salted water, heating oil in a large pan over medium heat, adding bacon and shallots and cooking until the shallots are wilted, about 4 minutes, adding mushrooms and sprinkling with salt, cooking and stirring occasionally until the mushrooms have released their moisture, about 5 minutes, adding broth, peas, and butter and seasoning lightly with salt and pepper, simmering until the liquid has reduced by half, about 10 minutes, checking the seasoning and adjusting if necessary, stirring the pasta into the boiling water and cooking until al dente, about 12 minutes, draining the pasta and adding it to the pan with the sauce, tossing well, adding cheese, tossing again, and serving.
