This savory side dish is perfect for shrimp, cod, halibut, or chicken chops. The recipe calls for cutting 3 slices of bacon into 1/2-inch pieces and cooking them in a large pan until crispy, about 5 minutes. Remove the bacon with a slotted spoon and set it aside on paper towels to drain. Add diced yellow onion to the pan and cook until translucent, about 5 minutes. Add 2 packages (10 ounces each) of frozen lima beans, salt, and pepper. Cook, stirring occasionally, until the lima beans are tender, about 10 minutes. Stir in the bacon and 1 teaspoon of sherry vinegar. Serve warm or at room temperature.
