This frittata is a great “all-in-one” breakfast dish that includes eggs, potatoes, and sharp cheddar cheese. The recipe is from Martha Stewart Living, February 2010. To make it, youll need 1 pound of small new potatoes, 3 tablespoons of extra-virgin olive oil, 2 small onions, coarse salt and freshly ground pepper, 1 ounce of sharp white cheddar cheese (grated), 10 large eggs, and 1/2 cup of heavy cream. First, cook the potatoes until tender, then slice them thinly. In a 10-inch skillet, cook the onions until translucent, then add the potatoes and cook until browned. Season with salt and pepper. Mix together the cheese and eggs, then pour the mixture into the skillet. Dollop with sour cream and cook until set. Bake in the oven until fully cooked, then invert onto a plate and serve warm.
