These savory steak sandwiches are served with roasted bell peppers and a horseradish sauce. This recipe is from Martha Stewart Living, April 2003. Preparation time is 25 minutes, cooking time is 10 minutes, and it serves 4.
Ingredients:
– 1/4 cup sour cream
– 1/4 cup mayonnaise
– 2 tbsp grated horseradish
– 1 tbsp coarse-grain mustard
– Coarse salt and freshly ground black pepper
– 1 1/2 pounds flank steak
– 3 tbsp extra-virgin olive oil
– 1 bunch watercress, tough stems trimmed
– 1 tbsp fresh lemon juice
– 4 thick slices rustic bread, toasted
– Roasted garlic and basil bell peppers, or store-bought roasted bell peppers, if you prefer
Directions:
1. Prepare horseradish sauce: whisk together sour cream, mayonnaise, horseradish, and mustard in a small bowl. Season with salt and pepper. Cover with plastic wrap; refrigerate while preparing steak.
2. Preheat broiler, with rack 6 inches from heat. Season steak well on both sides with salt and pepper; rub with 2 tbsp oil. Place on a broiler pan fitted with a rack. Broil 6 minutes on each side for medium-rare. Let rest 5 minutes before slicing 1/4 inch thick.
3. Toss watercress with remaining tbsp oil and lemon juice in a bowl. Season with salt and pepper. Serve on toasted bread with steak, horseradish sauce, and roasted bell peppers.
