These rich cheesecakes are an Austrian specialty. Farmers cheese is grated cheese that has been drained of most of its liquid; you can find it in most grocery stores. Ricotta cheese can be substituted, but it should be drained through a fine-mesh sieve for at least 30 minutes. Source: Martha Stewart Living, February 2008. The recipe calls for 1 1/2 cups of farmers cheese (about 9 ounces), 2 large eggs and 2 large egg yolks, 5 tablespoons of granulated sugar, 2/3 cup of flour, and about 1/2 cup of sweet breadcrumbs. The cheesecakes are served with stewed red plums. To make the cheesecakes, mix the cheese, eggs, yolks, and sugar in a medium bowl. Stir in the flour and 5 tablespoons of breadcrumbs. Use 2 wet spoons to shape the mixture into 2-inch-long ovals and drop them into boiling salted water. Cook until they rise to the surface, about 2 minutes, and continue to cook for another 3 1/2 minutes. Repeat. Divide the dumplings among individual serving dishes. Sprinkle with flowers and divide the plums and syrup among the dishes. Serve immediately.
