This recipe from Martha Stewart Living, April 2015, looks delicious! It only takes 45 minutes to prepare and cook, with 25 minutes in the oven. The recipe serves 4 and requires 1 pound of baby bok choy, 12 ounces of cherry tomatoes, 1 small shallot, a bunch of thyme, 2 tablespoons of extra-virgin olive oil, salt, pepper, 4 boneless, skinless chicken breast halves (about 6 ounces each), and 1/4 cup of dry white wine, such as Sauvignon Blanc. The directions are easy to follow, and the end result is sure to impress. Bon appétit!
