This fried chicken is soaked in a mixture of buttermilk, onion, and garlic before being breaded and fried. It is then finished with lavender flowers and drizzled with Wyebrook honey (which produces only a small amount each year) or surrounding farms. The recipe takes 5 hours and 30 minutes, with 1 hour of active cooking time, and serves 8.
To make the chicken, blend 1 cup of buttermilk with onion and garlic in a blender or food processor until smooth. Transfer the mixture to a large bowl; whisk in the remaining 3 cups of buttermilk, hot sauce, and 2 tablespoons of salt. Add the chicken and let it soak in the refrigerator for 4 hours, keeping the chicken completely submerged (with a plate, if necessary).
Mix the flour, cayenne pepper, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper in a shallow dish. Working with a few pieces at a time, remove the chicken from the buttermilk mixture, letting the excess drip back into the bowl. Dredge in the flour mixture to coat. Transfer the chicken to a rack set over a rimmed baking sheet and let it rest for 30 minutes.
Heat a large, heavy-bottomed pot containing 2 inches of oil over medium-high heat until the thermometer registers 350 degrees. Working in batches, carefully add the chicken to the pot; cook, turning occasionally with tongs, until golden brown and a thermometer inserted into the thickest parts (avoiding the bone) reads 165 degrees, about 15 minutes for white meat, and 10 to 12 minutes for dark meat. (Adjust the heat to maintain the oil temperature between 325 degrees and 350 degrees, and return the oil to 350 degrees between batches). Transfer to a plate lined with a paper towel and season with salt and pepper. Serve hot, drizzled with honey and sprinkled with lavender.
