This recipe for chicken colombo with purple jasmine rice is courtesy of Alter Eco. Source: The Martha Stewart Show, Spring April 2008. 4 servings. The ingredients: 1 1/4 cups of purple rice, preferably Alter Eco, rinsed. 2 tablespoons of olive oil. 1 small onion, finely chopped. 2 cloves of garlic, finely chopped. 1 can (14 ounces) of chopped and peeled tomatoes. 2 boneless, skinless chicken breast halves (approximately 1 pound), cut into strips. 2 tablespoons of curry. Coarse salt and freshly ground pepper. 1/2 cup of coconut milk. 2 pinches of ground cinnamon. Chopped cilantro leaves, for garnish. Directions: 1. Place the rice in a medium saucepan along with 1 3/4 cups of water. Bring to a boil over high heat; immediately reduce to low heat. Cover and simmer over low heat for 20 minutes. Remove from heat and keep warm. 2. Meanwhile, heat the oil in a large skillet over medium-high heat. Add the onions and garlic and cook, stirring, until golden brown. Add the tomatoes, chicken, and sprinkle with curry powder; season with salt and pepper. Reduce heat to low and cook, stirring, until the mixture thickens and the chicken is cooked, 15 to 25 minutes. Add the coconut milk and stir until well combined; cook for 5 more minutes. Sprinkle with cinnamon. 3. Divide the rice evenly among 4 serving plates; top with the chicken mixture. Garnish with cilantro and serve immediately.
