Ingredients: – 4 ounces of semi-sweet chocolate – 8 tablespoons (1 stick) of unsalted butter – 1/2 cup of all-purpose flour – 1/2 teaspoon of baking powder – Pinch of salt – 1/2 cup of cocoa powder – 4 large eggs, at room temperature – 1 teaspoon of vanilla extract – 1 cup of sugar – Confectioners sugar, for dusting
Instructions: 1. Preheat the oven to 350 degrees. Place a baking pan half-filled with water in the oven. 2. Bring a pot of water to a simmer. Place the chocolate and butter in a heatproof bowl. Place over the water and stir until almost melted. Remove from heat and let cool, stirring occasionally. 3. Sift together all dry ingredients except for the sugar twice. Set aside. 4. Beat the eggs and vanilla until frothy and light. Add the sugar and beat until fluffy. Mix in the chocolate and butter mixture. Fold in the dry ingredients. Pour into five 8-ounce ramekins, filling almost to the rim. Place in the baking pan; water should come halfway up the sides of the ramekins. 5. Bake for 30 minutes or until the edges are set and the centers are slightly jiggly. They should be firm to the touch. Let cool for 5 minutes and then dust with confectioners sugar.
