These Tyto cookies have a dark color and a distinct molasses flavor. To learn how to create different shapes, read Shaped Gingerbread Cookies. Source: Martha Stewart Living, December 2007. They yield about 2 dozen city houses, 4 dozen deer or trees, or 6 dozen men. Ingredients include 5 1/2 cups of all-purpose flour, 1 teaspoon of baking soda, 1 1/2 teaspoons of salt, 4 teaspoons of ground ginger, 4 teaspoons of ground cinnamon, 1 1/2 teaspoons of ground cloves, 1 teaspoon of freshly grated nutmeg, 2 sticks (16 tablespoons) of unsalted butter at room temperature, 1 cup of dark brown sugar, 2 large eggs, 1 1/2 cups of unsulfured molasses, and Royal Icing for gingerbread cookies. The instructions include mixing the dry ingredients in a medium bowl, beating the butter and sugar until fluffy, adding the eggs and beating well, beating in the molasses, gradually adding the flour mixture and beating until combined, dividing the dough into 3 portions and chilling for 1 hour, rolling out the dough to 1/4 inch thickness, cutting out desired shapes, freezing for 15 minutes, baking for 6 minutes, and decorating with royal icing. These cookies can be stored between layers of parchment in airtight containers for up to 1 week.
