This is a wonderful dessert recipe for a classic chocolate cake in a dinner style, with kind permission from Matt Lewis of Baked. Photo credit: Matt Lewis. Ingredients for delivery: 30 chocolate wafer cookies (about 6 ounces), 1 tablespoon sugar, 6 tablespoons unsalted butter melted, 1/2 cup sugar, 3 tablespoons Ovaltine chocolate malt powder, 1 teaspoon salt, 1/4 cup cornstarch, 5 large egg yolks, 2 cups whole milk, 1/2 cup heavy cream, 5 ounces hot chocolate (60 to 70 percent cocoa), coarsely chopped, 2 oz. Milk chocolate, chopped, 2 teaspoons whiskey, 1 teaspoon pure vanilla extract, Vanilla crispy cream. Instructions: 1. Make the crust: Place the cookies in the bowl of a food processor and process until finely ground. You should have about 1 1/2 cups. Transfer the crumbs to a medium bowl and stir in the sugar. Add the melted butter and stir until combined; the mixture should be moist. 2. Turn the crust mixture onto a 9-inch round pie plate. Using the back of a large spoon, press the mixture evenly down and up the sides. Transfer the crust to the freezer. 3. Make the filling: In a medium saucepan, whisk together the sugar, Ovaltine, salt, and cornstarch. Add the egg yolks and whisk until combined; the mixture will look like a thick paste. Slowly pour in the milk and cream, whisking constantly. Bring to a boil over medium heat, whisking constantly; let boil for 30 seconds and immediately remove from the heat. 4. Add the chocolate, whiskey, and vanilla; stir until well combined and the mixture has cooled slightly. Let stand at room temperature for 15 minutes. If a thin skin forms on the filling during cooling, whisk until the skin disappears. Remove the pie crust from the freezer and pour in the filling. Chill for 4 hours before serving. Serve with vanilla bean whipped cream.
