The taste of pure maple syrup is incomparable and is the reason why this sweet experience is so enjoyable; the fact that it is also quick to prepare is another bonus. Maple syrup is labeled and sorted by its color, from light to dark – the darker the color, the more intense the flavor. If you find grade B, use it for both the batter and the icing. This recipe calls for a cup of unsalted butter, room temperature, and more for pans, 2 1/2 cups of all-purpose flour, and more for pans, 2 teaspoons of baking powder, 1/2 teaspoon of baking soda, 1/2 teaspoon of coarse salt, 3/4 cup of pure maple syrup, 1/2 cup of granulated sugar, 2 large eggs, 1 teaspoon of vanilla extract, and 3/4 cup of sour cream for the cake. For the icing, you will need 1/3 cup of pure maple syrup, plus more if needed, 3 tablespoons of melted unsalted butter, and 2 1/2 cups of confectioners sugar, plus more if needed. To make the cake, preheat the oven to 350 degrees and butter a 9-inch square cake pan. Line with parchment paper and butter the parchment. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. With an electric mixer on medium speed, beat butter, maple syrup, and granulated sugar until light and fluffy, 3 to 5 minutes. Add eggs, one at a time, beating well after each addition; mix in vanilla. Reduce mixer speed to low. Add flour mixture in three batches, alternating with two batches of sour cream; beat until just combined. Transfer batter to prepared pan; smooth top with an offset spatula. Bake until a tester inserted in center comes out clean, about 40 minutes. Transfer pan to a wire rack and cool 10 minutes. Invert cake onto rack to cool completely. To make the icing, whisk together maple syrup and butter in a bowl. Sift in confectioners sugar and whisk until combined. Adjust consistency with more syrup or sugar, if necessary. Spread maple icing over top of cake. Let set at least 15 minutes before serving.
