This recipe requires all thin slices of very fresh fruit. It makes four pastries with a diameter of 2 x 2 inches. The ingredients include 2 phyllo sheets covered with plastic wrap and a damp towel, 1 tablespoon of unsalted melted butter, 2 very ripe peaches, halved, squared, and sliced into 1/4 inch pieces, and 8 teaspoons of light brown sugar.
Instructions: 1. Preheat the oven to 400 degrees. 2. Remove one sheet of phyllo dough from the package and place it on a clean work surface. Brush it with half of the melted butter. Place the second sheet on top and brush with the remaining butter. Cut the phyllo in half lengthwise and then into quarters lengthwise to create 8 rectangles. 3. Place 4 rectangles on a baking sheet lined with parchment paper and lightly spray with cooking spray. Place the remaining rectangles on top of each and prepare four four-layer pastries. Arrange about 10-12 peach slices on each pastry and sprinkle 1 teaspoon of brown sugar on each. Bake for 10 minutes. 4. Remove from the oven and sprinkle each pastry with another teaspoon of brown sugar. Return to the oven and bake for 5-7 minutes until the sugar has melted and bubbled.
