These chocolate and cinnamon waffles were made in a waffle iron, then dusted with powdered sugar. Source: Martha Stewart Living, December 2004. Makes about 4 dozen. Ingredients: 3 ounces unsweetened chocolate, chopped, 9 ounces (2 1/4 sticks) unsalted butter, 4 large eggs, 1 teaspoon pure vanilla extract, 1 1/2 cups granulated sugar, 1/2 teaspoon salt, 1 1/2 teaspoons ground cinnamon, 1/2 cup plus 2 tablespoons unsweetened cocoa powder, 1 1/2 cups all-purpose flour, Vegetable oil, 1/4 cup confectioners sugar and more for dusting, 4 1/2 teaspoons milk. Instructions: 1. Melt chocolate and 2 sticks butter in a small saucepan over medium heat, stirring. Let cool slightly. 2. In the bowl of an electric mixer fitted with the paddle attachment, beat eggs, vanilla, and granulated sugar on medium speed until pale, 4 to 5 minutes. Mix in chocolate mixture, salt, cinnamon, 1/2 cup cocoa, and flour. 3. Heat a waffle iron until hot. Lightly brush grids with cooking spray. Drop tablespoons of batter into center of each waffle square (circles should be about 1 1/2 inches). Close lid; cook until set, about 1 1/2 minutes. Remove cookies with a fork; let cool, bottoms up, on a wire rack. Repeat (coating grids with cooking spray each time). 4. Melt 2 tablespoons butter in a small saucepan. Add confectioners sugar and remaining 2 tablespoons cocoa; stir until smooth. Stir in milk. 5. Dip tops of cookies into glaze so they are coated with waffle (not spaces). Let glaze set about 10 minutes. Use a fine-mesh sieve to dust with confectioners sugar.
