These crispy, spicy cookies are perfect for vacation. The recipe yields 16 large cookie batches and requires 6 cups of all-purpose flour, 1 teaspoon of baking soda, 1/2 teaspoon of baking powder, 1 cup (2 sticks) of unsalted butter, 1 cup of packed dark brown sugar, 4 teaspoons of ground ginger, 4 teaspoons of ground cinnamon, 1 1/2 teaspoons of ground cloves, 1 1/2 teaspoons of salt, 1 teaspoon of finely ground pepper, 2 large eggs, and 1 cup of unsulfured molasses. To make the cookies, mix the flour, baking soda, and baking powder in a large bowl. In a separate bowl, cream the butter and brown sugar with an electric mixer until fluffy. Mix in the spices, salt, and pepper, then add the eggs and molasses. Add the flour mixture on low speed. Divide the dough into thirds, wrap in plastic, and chill for at least 1 hour. Preheat the oven to 350 degrees. Roll out the dough on a floured surface to 1/8-inch thickness. Cut out desired shapes and transfer to baking sheets lined with Silpat mats. Chill until firm, about 15 minutes. Bake for 8 to 10 minutes, or until crisp but not dark. Cool on wire racks and decorate.
