This delicious and comforting appetizer from head chef Ryan Far is inspired by the dessert menu. Source: Martha Stewart Show. The ingredients include unsalted butter, 8 large eggs, 8 cups of 1-inch cubes of country bread, 2 cups of thickly sliced bacon, 1 1/2 kilograms of cooked chicken, apple and Calvados sausage, roughly chopped into pieces (about 4 cups), 2 cups of peeled, cored and chopped apples, such as Granny Smith, 1 cup of chopped yellow onion, 1 tablespoon of chopped fresh thyme, 1 tablespoon of chopped fresh marjoram, 1 teaspoon of coarse salt, 1/2 teaspoon of freshly ground black pepper, 2 cups of grated Gruyere cheese, and 2 cups of warm milk. The instructions are to preheat the oven to 325 degrees, butter a large, deep baking dish, beat the eggs in a large bowl for about 1 minute, add the bread cubes and toss until completely covered, set aside, cook the bacon in a large skillet over low heat until the fat is rendered and the meat is crispy, add the sausage and cook until just starting to brown, add the apple, onion, thyme and marjoram, season with salt and pepper, cook, stirring, for 1 minute, transfer the sausage mixture to the bowl with the bread, add 1 cup of Gruyere, slowly add the milk, gently pressing so that the bread retains its shape, transfer the bread mixture to the prepared baking dish, sprinkle with the remaining 1 cup of Gruyere, transfer to the oven and bake until golden and bubbly and the internal temperature reaches 170 degrees on an instant-read thermometer, about 1 hour and 15 minutes, remove from the oven and let stand for 30 to 45 minutes before serving.
