This recipe for brown sauce comes from “Inspired by Ingredients” by Bill Telepan. Source: Martha Stewarts show, May 2007. Makes enough for 4 servings. Ingredients: 2 tablespoons white wine vinegar, 4 tablespoons (1/2 stick) unsalted butter, 1/4 cup heavy cream, coarse salt for seasoning. Instructions: 1. Place vinegar in a large, heat-resistant bowl. 2. Place butter and cream in a small, heavy-bottomed saucepan and heat over medium-high heat. Reduce heat to medium-low and whisk constantly until the mixture thickens to the consistency of mayonnaise and the solids separate and float on top for about 5 minutes. Transfer the mixture to the bowl of a food processor and process for 20 seconds to break up the solids. Return the mixture to the saucepan and cook over medium-low heat, stirring constantly, until it turns dark brown, about 3 minutes. 3. Add the mixture to the vinegar (it will foam). Add salt and a spinning mixing bowl; whisk. Enjoy!
