These yeast are beloved. Source: Martha Stewart Living, October 2007. Recipe 9. Ingredients For the donuts 1/2 cup whole milk, warmed to 110 degrees 1/2 cup granulated sugar 1 1/2 teaspoons active dry yeast 1 large egg, room temperature 2 tablespoons water 1 teaspoon pure vanilla extract 2 1/2 cups all-purpose flour, plus more for dusting 1 teaspoon ground cinnamon 1 teaspoon freshly grated nutmeg 1/2 teaspoon salt 1/2 stick (4 tablespoons) unsalted butter, melted, plus more for bowl Vegetable oil cooking spray 10 cups vegetable oil, for frying For shaping 1/2 cup granulated sugar 1 teaspoon ground cinnamon Pinch of salt Instructions 1. Combine milk, 2 tablespoons sugar, and yeast in a small bowl and let stand until foamy, about 10 minutes. Beat egg, water, and vanilla together in a bowl. 2. Combine flour, cinnamon, nutmeg, salt, and remaining sugar in the bowl of a standing mixer fitted with paddle attachment. With mixer on low speed, add yeast mixture, egg mixture, and melted butter, mixing until just combined. Switch to dough hook and knead at medium speed until dough forms a ball, 18 to 20 minutes. Place dough in a large oiled bowl and cover with plastic wrap. Refrigerate overnight. 3. Cut out a parchment paper and cover the parchment with cooking spray. On a lightly floured work surface, roll out dough to a 1/4-inch thickness. Cut out circles with a 4-inch cutter, then cut out centers with a 1 1/2-inch cutter. Space rings and holes 1 inch apart on prepared baking sheet. Cover with another piece of parchment sprayed with cooking spray and let sit in a warm place for 1 hour. 4. To prepare: Combine sugar, cinnamon, and salt in a small bowl. 5. Heat oil in a large pot until a deep-fry thermometer registers 375. Meanwhile, line a baking sheet with paper towels. Working in batches to avoid crowding, fry donuts (and holes) in hot oil, turning occasionally, until golden brown, about 1 to 2 minutes total.
