You wont believe how easy it is to give French toast a spicy, crispy caramelized sugar coating. This recipe works best with day-old bread. If you use fresh bread, reduce the soaking time by half. Total time: 35 min, Prep: 25 min, Servings: 6. Ingredients: 4 large eggs, 1 cup whole milk, 2 tablespoons light brown sugar, packed, 1 vanilla bean, split and seeds scraped, or 1 teaspoon pure vanilla extract, coarse salt, 1 cup granulated sugar, 1 loaf challah bread (about 8 ounces), cut into 1-inch-thick slices, 2 tablespoons unsalted butter, fresh fruit, such as peaches, and crème fraîche, for serving. Instructions: 1. Preheat the oven to 250 degrees. 2. In a large shallow dish, whisk together the eggs, milk, brown sugar, vanilla, and a large pinch of salt. Add 4 slices of bread in a single layer and let soak for 1 minute. Flip the bread and sprinkle evenly with 2 to 3 tablespoons of granulated sugar, pressing gently to adhere. 3. Melt 1 tablespoon of butter in a large skillet over medium-high heat. Lift the bread from the egg mixture, allowing the excess to drip off. Add to the skillet, sugar-side down. Reduce the heat to medium. Sprinkle each piece with 2 to 3 tablespoons of granulated sugar, pressing gently to adhere. Cook until a crust forms on the bottom and the toast is golden brown, 5 to 6 minutes. Flip and cook until a golden crust forms on the second side, another 4 to 5 minutes.
