This recipe makes enough for one quiche baked in a 9-inch springform pan, or two quiches baked in eight or nine inch pie pans. The total time is 6 hours and 45 minutes, with 10 servings. For the crust, you will need 1 3/4 cups of all-purpose flour, plus more for dusting, 1 teaspoon of coarse salt, 1 stick of unsalted butter, cut into pieces, 1 large egg, plus 1 large egg yolk, and 3 tablespoons of ice water. For the main filling, you will need 6 large eggs, 1 1/2 cups of heavy cream, 1 1/2 cups of whole milk, 1 1/2 teaspoons of coarse salt, and 1/2 teaspoon of freshly ground pepper. The instructions are to combine the flour and salt in a food processor, add the butter and pulse until the mixture resembles coarse meal, beat together the egg and yolk with the ice water, add to the flour mixture and pulse until moist clumps form, shape into a disk and chill for at least 30 minutes, roll out the dough and fit into the pan, trim the edges, freeze for 30 minutes, preheat the oven to 400 degrees, line the crust with parchment paper and fill with dried beans or pie weights, bake for 20 minutes, remove the paper and beans, bake until golden, let cool, beat the eggs until smooth, whisk in the remaining ingredients, pour into the crust, bake for 10 minutes, reduce the oven temperature to 325 degrees, bake until the filling is set, and let cool for about 1 hour before serving.
