This recipe is perfect for making our spinach and pea soup. Dont worry if there are gaps when you sprinkle the cheese in the pan; the cheese will melt into a lace-like whole. Source: Martha Stewart Living, March 2007. Serves 4. Ingredients: 1 1/2 ounces Parmesan cheese, grated on the medium holes of a grater (about 6 tablespoons). Instructions: 1. Heat a medium nonstick skillet over medium heat. Sprinkle about 1 1/2 tablespoons of Parmesan onto the skillet to form a 4-inch circle. Cook until the Parmesan is slightly melted and begins to harden, about 3 minutes. Using a thin spatula, flip; cook until firm but not browned, another 20 to 30 seconds. Transfer to a small bowl (about 2 1/2 inches in diameter) and press into a bowl to shape. Let cool completely. Repeat with the remaining Parmesan to make 4 frico.
