We love to use a combination of McIntosh apples and deep red varieties, such as Empire or Cortland. The first ones have a classic taste, while the latter have a beautiful color. Prep time is 1 hour and 15 minutes, and it yields about 6 1/2 cups.
Ingredients:
– 4 pounds of McIntosh apples, cored and diced
– 2 kilograms of red apples, such as Empire or Cortland, cored and diced
– 1/4 cup of fresh lemon juice
Instructions:
1. Combine the apples, lemon juice, and 1 1/2 cups of water in a large pot. Cover and bring to a boil, stirring occasionally. Reduce the heat to medium, partially cover, and cook, stirring occasionally, until the apples are completely soft, about 40 minutes.
2. Pass the apples through a sieve with a medium mesh or a food mill fitted with a fine disk to remove the skins. The apples can be stored in the refrigerator for up to 1 week or in the freezer for up to 3 months. Follow these instructions to can the apples.
Variations:
– White apple puree: Eat the apples before cooking.
– Sweet apples: Add 1/4 cup of sugar to the apple mixture in step 1 before cooking.
